I heard today is National Soft Taco day. I love crispy tacos, but sometime soft tacos are what I want! Here is one that you can make quick with ingredients you can buy on the way home!
What you need:
- 12 oz. cooked chicken
- 4 Tablespoons canned, diced green chilies
- 1 teaspoon ground cumin
- 1 teaspoon chipotle chili powder
- 3 limes
- 1 teaspoon lemon pepper
- Salt to taste
- 8 corn tortillas
Crema
- 1 cup of whipping cream
- 4 chilies from a can of chipotle chilies in adobo sauce
Condiments:
- Chopped cilantro
- Grated cheese (jack or other soft white cheese)
- Tomatoes
- Chopped green onion
- Avocado
How to Do it:
Cut one lime in half. Rub both sides of each tortilla well. Sprinkle on some chili powder and put the tortillas in a plastic bag. Set aside.
In a blender, whip the chipotles with the cream until the cream starts to thicken. Pour into a bowl and set aside
Mix the chicken, green chilies, the juice from the remaining limes and the chili powder, lemon pepper and cumin. Heat up in a small sauce pan.
Put the tortillas in the plastic bag into the microwave and heat until the bag expands and the tortillas are soft.
Spread the meat mixture evenly over each tortilla.
Pour a spoonful for two of crema over the top.
Each person can put what condiments they want on top.
Serves 4
