Gingered Salmon Fillets

Salmon goes well with the sweet flavor of ginger.  Let it soak up some of that goodness, then grill it – easy, quick and good for you too!

Gingered SalmonFillets

What you need:

  • 4 salmon fillets (1#)
  • 1 ½ cup (12 oz.)  gingerale (the full sugar kind)
  • 3 Tablespoons brown sugar
  • 1 teaspoon dried, ground ginger
  • 2 teaspoons lemon pepper
  • 1 teaspoon flaked sea salt

How to Do it:

Mix the gingerale, brown sugar, ginger, lemon pepper and ½ teaspoon salt in a shallow dish.

Place the fish skin side down, then turn so it is skin side up.  Cover and marinate in the refrigerator for 2 hours.

Remove the fish from the marinade and dry on paper towels.  Sprinkle the remaining salt evenly over the skin.

Heat a grill or grill pan on medium-high heat.  Cook skin side down first, until the skin is a dark golden color and crispy.

Turn and cook skin side up for just a couple of minutes, until the fish is cooked through.  Be careful not to overcook.

Goes great served with rice and a bright green vegetable (like broccoli or zucchini)
