Figs with Gorgonzola and Prosciutto

I found some beautiful figs at the store and decided to do something different with them for company. I love gorgonzola cheese with something sweet so I decided to make a tasty little appetizer.

Some fig facts: Figs don’t have a long shelf life, so they need to be eaten shortly after purchase. The fruit, unlike other fruits, is actually the flower that has closed in on itself. They are also the only fruit that ripens and starts to dry while it’s still on the tree. Figs are low in calories and contain calcium, vitamins A, B1 and B2, magnesium, potassium and manganese, among other things. But they also have a substance known as oxalates that can contribute to kidney stones and gall bladder troubles! If you have those issues, don’t eat too many.

So are you ready for a pop in your mouth burst of flavor?

Here’s How to Do it:

Start with fresh, ripe, black mission figs. Slice them in half lengthwise.

Place about 1/2 Tablespoon of gorgonzola on one half of each fig.

Replace the second half, and carefully wrap in a strip of prosciutto.

Place in a baking dish. Continue the process until all figs are stuffed and wrapped.

Drizzle the olive oil over the figs.

Bake at 350° for about 30 minutes, or until the prosciutto begins to get crispy and the cheese is soft and melting.

Allow to cool and serve. Easy and delicious!
