Super Easy Meatballs and Gravy

I hadn’t intended for this recipe to become a post, but it came out so darned good I had too!! And it’s so easy [7] you can make it in about 30 minutes! Just start with your favorite pre-made meatball (I used Beyond Beef meatballs) – add a few ingredients and voila! It’s dinner –

Here’s How to Do it:

Start by cooking the pasta according to the package directions. I used a fettuccini noodle, but any kind of flat noodle works great. Be sure to save about 1/4 cup of the water from the cooked pasta, you’ll need it for the sauce.

Now, combine the meatballs, golden mushroom soup and gochujang paste in a medium sauce pan and heat on medium low. Continue heating until the meatballs are heated through.

Stir in the quark and pasta water and simmer, stirring until it’s all well blended. Serve hot over the pasta!

But what is quark, you ask? It is a fresh cheese that is made from soured milk. It’s creamy and tart! If you can’t find it (I buy mine in a local German market), puree equal parts of cottage cheese and Greek yogurt together.

Gochujang paste is red chili paste that has been fermented and is often found in the Korean foods section. If you can’t find it, Thai chili paste can be substituted (but the gochujang has better flavor).

  • 24 pre-made meatballs
  • 2 14-oz cans Golden Mushroom Soup
  • 1/2 Tablespoon Gochujang paste
  • 1/4 cup Quark
  • 1/4 cup water from cooking pasta
  • 4-6 cups cooked Fettuccini pasta
Instructions
