Crispy Tostados for Breakfast

Most days we eat cereal or a granola bar for breakfast, but some days require a filling, satisfying meal. Just add a side of fruit to these breakfast [7] tostados and you will be satisfied for hours!

Here’s How to Do it:

Start by removing the plastic from the chorizo and, in a heavy, large skillet, cook on low.

Cook until the meat is cooked and most of the liquid has evaporated.

While the meat is cooking, heat some oil in another, shallow pan. Fry the tortillas until the are lightly browned and crispy. Lay the tostado shells on paper towels to drain.

To the same pan, add the beans and cook, turning often, until they are warmed all through.

While the chorizo and beans are cooking, crack the eggs into a large bowl and beat well.

Move the chorizo and beans to the side and pour in the eggs. Gently stir the eggs until they are cooked through.

Prepare the condiments.

Now comes the assembly of the tostados. Spread some beans on the tortilla and top with some shredded cheddar. On top of that, put some chorizo, then eggs. Garnish with cilantro, salsa, and avocado.

Ingredients
  • 4 corn tortillas
  • 9 oz Mexican chorizo (beef or pork - I used beef)
  • 16 oz can refried beans - I used green chile and lime
  • 3 large eggs
  • 3/4 cup Shredded cheddar cheese - extra sharp
  • 3 Tablespoons minced cilantro
  • Salsa
  • Sour cream
  • Sliced avocado
