Crab Stuffed Mushrooms

Well I missed it. I love mushrooms and yesterday was National Stuffed Mushroom day.

A day for stuffed mushrooms? Yep. Who knows who started this day, but hey, I love stuffed mushrooms! I like them stuffed with oysters [8] – filled with pinenuts and parm and garlic [9] – or this way!

Enticed? Good!

Here’s How to Do it:

Remove the stems from the mushrooms. Set them aside for another use (like chopped in an omelet).

Pour about a teaspoon of melted butter into each cap.

In a large bowl, mix the remaining ingredients, except the chives and parmesan.

Place spoonfuls of the crab mixture evenly into each cap.

Using a microplane, grate the cheese over each mushroom –

about 1 heaping teaspoon full.

Preheat the oven to 350° –

Bake the mushrooms for about 25 – 30 minutes, or until the cheese is melted and starting to brown.

Remove from the oven and allow to cool 5 to 10 minutes. Pour the drippings from the pan over the mushrooms.

Sprinkle with chopped chives and serve hot or cold.

Stuffed with a deviled crab mixture, these delightful mushrooms are delicious hot or cold.

Ingredients
  • 12 Large Crimini mushrooms
  • 1 14-oz can crab meat (or 1/2 cup lumpmeat crab
  • 1 Tablespoon mayonnaise
  • 1/4 teaspoon lemon pepper
  • 1/2 teaspoon old bay seasoning
  • 1 Tablespoon plain breadcrumbs
  • 2 inch piece hard parmesan
  • 1/4 cup melted butter
  • 1 Tablespoon minced, fresh chives
  • Salt and pepper to taste
