Chili Casserole with Fritos and Cheese

It’s National Chili Day!

We love chili and the fourth Thursday in February is set aside to pay tribute the most versatile yet disputed dish around. If you’re from Texas, using beans is a mortal sin! But if you live somewhere else, you might want beans. Heck – in Cincinnati they eat it over spaghetti pasta.

No one quite knows where the dish started, but Texas is happy to claim it. They even made it their state dish in the 1970s. Made primarily of meat and chili – some folks add beans or tomatoes or even pasta!

So I thought about this day. I’ve posted chili recipes of every kind imaginable. I’ve posted collections of chili. So what can I do today that’s different than I’ve done before?

A casserole! A chili casserole! And I don’t mind saying, this came out so good I’ll be making it again and again!

Here’s How to Do it:

Preheat the oven to 350°

Here’s a tip – When you cut an onion, cut the stem side first leaving the root in tact. This will hold the onion together while you slice making it easier to hold!

Heat the olive oil in an oven proof skillet. Sauté the onions and garlic until they are slightly soft and fragrant. Stir in the Southwestern vegetables.

Crumble the beef into the pan

and add the spices.

Cook until staring to brown, stirring in the spices while it cooks. Add the beans and simmer about 5 minutes.

Top with the shredded cheese and bake about 20 minutes.

Remove from the oven, closing the oven door, and top evenly with the fritos. Put it back in the oven and bake another 15 to 20 minutes, until the are starting to soak up the drippings in the dish.

Remove from the oven and let set for about 10 minutes.

Serve hot with sour cream and avocado.

A casserole! A chili casserole! And I don't mind saying, this came out so good I'll be making it again and again!

Ingredients
  • 1 Tablespoon olive oil
  • 1 cup chopped onion
  • 1/4 teaspoon crushed or minced garlic
  • 1 pound ground chuck
  • 1 cup Southwestern Vegetable blend (corn, black beans, poblano chilies, red & green pepper)
  • 1 teaspoon salt
  • 1/4 cup chili powder
  • 1/2 Tablespoon cumin
  • 1 14-1/2 oz can of chili beans
  • 1 cup shredded cheddar, extra sharp
  • 2 cups fritos corn chips
  • Sour cream and avocado to garnish
Instructions

    That Southwestern veggie blend is so convenient, I wish we had it here in Canada! But we do have all the ingredients available, so I have pinned this recipe to try soon!
