Chicken and Rice Casserole with Broccoli and Cheese

I love casseroles AND I’m trying to eat healthier. Chicken and brown rice are two of my favorites, but I get tired of baked chicken – even with a variety of seasonings. And what can you put on rice besides butter? No one likes dry rice.

This casserole is full of flavor and nutrition, but low in fat. It can be made with leftovers or with precooked components. Either way you do it, it’s really tasty! It’s a fresh take on baked chicken – and no dry rice! You’ll want more than one serving.

Here’s How to Do it:

Start by preheating the oven to 350° –

Mix all the ingredients except the cheese in a 2 to 3 quart casserole dish. Add salt and pepper to taste.

Spread the cheese evenly over the top.

Bake for about 30 to 40 minutes,  or until the cheese is beginning to brown.

Remove from the oven and serve hot.

That’s it. In a few minutes, you have a delicious, healthy dinner for the family. You can eat the casserole as the meal, or add a small salad on the side for some extra vegetables.

Just a side note – I ate some cold and it was pretty good too!

So go ahead and mix some up – pop it in the oven while you take off your shoes and change into your P.J.’s – then relax and enjoy your meal and your evening. Easy is the word!

Ingredients
  • 1 cup cooked chicken, cut into small pieces
  • 2 cups frozen broccoli (do not thaw first) you can also use fresh, but blanche first
  • 3 cups cooked brown rice
  • 1-1/2 Tablespoon butter
  • 1/3 cup half and half or whole milk
  • 1 to 2 cups shredded extra sharp cheddar
  • Salt and pepper to taste
