Cashew cheese? Yep – and it’s delicious!
As I’m looking for heart healthy options for meals, I’m trying to eat more unprocessed vegan options. My sister makes a cashew cheese and I’ve seen it on several cooking shows, so I decided to try it. I reviewed a few recipes then went at it with my own additions.
It is so good, I used the whole jar in a week! And the best part? It’s so easy to make!
Here’s How to Do it:
Add 1/2 the cashew milk and all the other ingredients into a blender. Process on high until it’s a well blended mash.
You can take it out now and use it as a cheese spread, or add the remaining milk to create a sauce.
Store in a lidded jar in the refrigerator. If you label it with a permanent marker, you can remove it when your finished with fingernail polish remover, then wash it with hot, soapy water.
NOTE: This is best heated slowly on the stove, not microwaved.
What do you use it on? Loaded baked potato, Sandwiches, Roasted or steamed vegetables – Or simply replace regular cheddar sauce or spread with this cashew version.
We had portabello sandwiches with the cheese sauce on it –
and it was so good! (Pan seared mushroom slices with garlic on toasted whole wheat bread).

totally plant based and unprocessed, this cheese is delicious on anything you use cheddar cheese sauce on!
- 1 cup raw cashews Be sure they are raw - not roasted or cooked at all
- 1-1/4 cup cashew milk
- 2 Tablespoon grated fresh carrot
- 1/2 cup nutritional yeast
- 1 medium clove fresh garlic
- 2 Tablespoons fresh lemon juice
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon lemon pepper
- 1/4 teaspoon smoked paprika
- 1/2 teaspoon tumeric
- 1/4 teaspoon dijon mustard
- 1 Tablespoon softened vegan buttery spread I used Trader Joe's
