Broiled Salmon and Tomatillos

We had a nice crop of tomatillos this year, thanks to a neighbor who shared! Some got husked and put in the freezer, others got cooked or put into salsa.

This dish has those tasty, tart green fruit broiled on top of a beautiful salmon fillet.

Here’s How you Do it:

For each of the four dishes –

Sprinkle salt and pepper on the flesh side of the fillet – generously salt and pepper the skin side.

Place the oil in the bottom of a single serving baking dish, like a gratin dish. Place the salmon, skin side down.

Top with slices of tomatillo and sprinkle with a little more salt and pepper and the minced jalapeño.

Place the dishes on the top rack of the oven and broil until the fish is a delicate pink and flakes with a fork (but is not dry). This will take about 10 minutes depending on the thickness of the fillet.

Serve with chopped cilantro and sliced avocado directly out of the cookware.

Ingredients
  • 4 Salmon Fillets
  • 8 Tomatillos, husked and washed
  • 4 teaspoons minced jalapeño
  • 1/4 cup chopped cilantro
  • 1 avocado, sliced
  • 4 Tablespoons olive oil
Instructions
  1. Sprinkle salt and pepper on the flesh side of the fillets - generously salt and pepper the skin side.

  2. Place the oil in the bottom of four single serving baking dish, like a gratin dish. Place one salmon, skin side down in each.

  3. Top each with slices of tomatillo (2 tomatillos each) and sprinkle each with a little more salt and pepper and the minced jalapeño.

  4. Place the dishes on the top rack of the oven and broil until the fish is a delicate pink and flakes with a fork (but is not dry). This will take about 10 minutes depending on the thickness of the fillet.

  5. Serve with chopped cilantro and sliced avocado directly out of the cookware.
