BALTO – Bacon, Avocado, Lettuce, Tomato and Onion Sandwich

Who doesn’t love a BLT? And who can resist creamy avocado. This sandwich was so go and so satisfying! It is now our new comfort food!

BLT

Where did the BLT come from? No one really knows. It had to have been in the 20th century when all the ingredients were available. And who decided to name it using the acronym remains a mystery. But everyone knows what a BLT is!

So here is my take on this traditional favorite – And I think it’s really good!

Here’s How to Do it:

Start by cooking the bacon [7]. I like it crispy but my husband likes it limp. So I start mine first. Don’t rush it! Cook it low and slow to render the fat and crisp up the white parts. When mine is about half done, I add his. Be sure to drain it well on paper towels or coffee filters. By the way – coffee filters are perfect for draining anything fried. They soak up the grease quickly!

Using any kind of bread (we love sourdough – and I make it alot), toast it lightly. You can also use buns or rolls (like I did here – left over hot dog buns!

Spread the bread with mayonnaise (use the amount you like, not necessarily the amount for the recipe) then top with the avocado, then the onion, bacon and lettuce.

Top with the bread.

Eat!
