Candied Bacon Pancakes with Bourbon Maple Syrup
What’s better than bacon for breakfast? Bacon and pancakes you say? Well how about pancakes with bacon inside of them? Sounds great, right? Well now we top all that deliciousness with a bourbon maple syrup and breakfast is served!
What you need:
- 1 ½ cup all-purpose flour
- 2 Tablespoons brown sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 egg
- 1 cup buttermilk** (see note)
- 2 slices candied bourbon bacon (click for recipe)
** If you don’t have any buttermilk you can make your own – add ½ Tablespoon of cider vinegar to 1 cup of milk. Let it set for a few minutes and use as you would buttermilk!
- ¼ cup maple syrup
- 1/8 cup bourbon
**Heat the maple syrup. Let cool slightly and stir in the bourbon. Set aside until ready to use.
How to Do it:
Mix the dry ingredients together. In a small bowl, whisk the egg and milk together.
Chop the bacon
and mix it in with the dry ingredients, making sure each piece is lightly coated.
Stir in the milk and mix just until everything is wet – don’t over mix!
Scoop onto a hot griddle and let sit until you see tiny bubbles forming and popping on the top. Now it’s time to flip the pancake.
Cook on the second side and remove from heat.
Top with the bourbon maple syrup and a little more chopped bacon –
Makes about 6 pancakes and 3-4 servings
