Ale Braised Swiss Chard with Bacon

Farmer’s Market Fresh- Oregon Ale…

Chard and beer – I love living in the Northwest.  This side dish is easy and delicious.

What you need:

  • 2 bunches of red chard, cleaned and thick stems removed
  • 6 cloves of crushed garlic
  • 4 slices of bacon, chopped
  • 1 ½ cups pale ale

 

 

You’ll have to drink the rest of the bottle of ale….

 

How to Do it:

Chop the leaves into bite sized pieces.

Place in a skillet with the remaining ingredients.  Bring the ale to a boil.  Cover and simmer until the leaves are soft and tender.

Drain and serve.

You can also cook ahead and reheat by quickly sautéing in a little olive oil.

Makes 4 servings
