This has been a crazy year – like everyone else I need a do over. It all started with my husband’s health spiraling downward. And just when things started getting better, the new coronavirus reared it’s ugly head in my neck of the woods.

And here we are at the end of the first quarter of the year and what do have to show for it? Two weeks of captivity with many more to go. And then my husband keeps asking me…

Let’s start with cookies! Who doesn’t love a warm cookie while your sheltering in place? Here’s one I bet you already have all the ingredients for. Peanut Butter Chocolate Chip Cookies [7] from Petals, Pies and Otherwise.

Who doesn’t love macaroni and cheese, but it’s hard when you have to avoid gluten. The Hungry Mountaineer shared this incredible recipe for Gluten-Free Cauliflower “Macaroni” and Cheese with Spicy Hot Links [8] – Oh my mouth is already watering!

I love roasted vegetables – well, I love roasted anything. But these One Pan Oven Roasted Vegetables [9] from Just Simple Somethings have my taste buds dancing!

And finally, a recipe that reminds me of my childhood. My mom made a dish very similar to the one shared by Scratch Made Food – How to make Fried Mashed Potatoes, My Grandmother’s Potato Cakes [10].
