Strawberry – Lavender Lemonade

A hot summer day calls for ice cold lemonade! And with all the plump strawberries everywhere, why not fancy it up? How about the flavors of strawberries and lavender in that lemonade swirling around in your mouth, cooling you down and bursting with flavor in your mouth!

What you need:

  •  1 cup fresh strawberries cut in half
  • 1 cup water
  • ¼ cup sugar
  • 2 Tablespoons dried, culinary lavender
  • ½ to 3/4  cup fresh lemon juice (about 2 lemons)
  • 4 cups cold water (I start with 3 cups and adjust to taste – some like it more intensely flavored than others.)

How to Do it:

Put the strawberries and water into a sauce pan and bring to a boil.

Simmer until the water is pink and the berries are soft and losing their color.

Stir in the sugar and lavender and simmer on low for about 20 minutes. Add a little more water if necessary.  Remove from heat and allow to cool.

Strain the berry syrup into a pitcher.

Stir in the lemon juice,

then the water. Add more sugar to taste. I like it tart so this is where I stop.

Chill for at least 4 hours. Serve over ice.

Makes about a quart of lemonade.
