Smoked Salmon Wrap

More smoked salmon!  I love tuna sandwiches, but tuna has a high risk of contaminants like mercury.  So I tried it with smoked salmon instead – and here is what I got – pure deliciousness!

What You Need:

  • 2 ½ oz. smoked salmon (I used chinook)
  • 2 Tablespoons finely chopped onions
  • 1 Tablespoons capers
  • 1 Tablespoon light mayonnaise
  • ¼ teaspoon lemon pepper
  • 1 low fat tortilla wrap
  • Lettuce leaves

How to Do it:

Cut up and crumble the salmon in a bowl. Mix in the onions, capers, mayonnaise and lemon pepper.  Chill.

Put the salmon mix on the center of a tortilla in a line.

Add some lettuce leaves on top and wrap, folding one end over then rolling.

Serves 1
