One Pot Dinner – Chicken Cacciatore

This meal is all cooked in one pot – Add a salad and you have a complete meal!

Takes about an hour and half to prepare and cook – So cook and enjoy!

How to Do it:

Dredge the chicken pieces in the flour.

Heat 2 Tablespoons of the oil in a large skillet and brown the chicken on all sides.  Remove from the pan.

Add the remaining olive oil and heat on medium-high.  Add the mushrooms, onions and bell pepper and gently cook until the mushrooms start to soften.

Stir in the rice and cook until it begins to look slightly brown.

Stir in the chicken broth and loosen all the bits of cooked food from the bottom of the pan.  Using a garlic press, crush the garlic into the mixture.  Stir in the tomatoes and mix well.  Bring to a boil.

Reduce heat to low and sprinkle the olives evenly over the top.

Lay the chicken on the top of the mixture and cover.

Reduce heat to low and cook, covered for about an hour, or until the chicken is cooked through and the rice is tender.

Serve with shredded parmesan cheese and basil ribbons on the top.
