Mother’s Day Breakfast in Bed

Here’s a breakfast even a child could prepare (with a little help from a grown up) that treats mom like a queen on her day – Breakfast in bed!

What you need:

Line a muffin tin with the bacon to form “basket” of sorts. I did learn that it won’t hold that little heart shape – it shrinks to much.  So a round tin works too.

Put a glass or cup in the middle to weight down the “basket” center and bake at 350 degrees for about 15 to 20 minutes, until the bacon is crisp.  Remove from tin and drain on paper towels.

Dice the veggies and shred the cheese.

Spray a small pan with non-stick spray.  Heat the olive oil in the pan and gently sauté the peppers and onions.  Add salt and pepper to the eggs and pour into the pan.

Cook, turning gently, until the eggs are almost set.  Add 2 Tablespoons of the cheese and continue to cook until the eggs are firm.

Place the bacon cup on the center of a plate.

Top with the eggs, then the last 1 Tablespoon of cheese.

Garnish with an edible flower (I used chive) and serve with fruit and sparkling water (or champagne!)
