MLT – Meatloaf, Lettuce and Tomato Sandwich

I like meatloaf. It’s a great comfort food. But the best part of meatloaf are the sandwiches made from the leftovers. But why wait for the leftovers? Make the meatloaf specifically for sandwiches!! And if you add some avocado, you have a MALT!

What you need:

Meatloaf

  • 1 pound ground beef (low fat)
  • ½ pound ground turkey breast
  • ¼ cup panko bread crumbs
  • 1 egg
  • ½ teaspoon each; garlic powder, onion powder, smoked paprika, sea salt
  • ¾ teaspoon lemon pepper

Sandwiches

  • 8 slices toasted sourdough bread (click here for a great homemade recipe!)
  • 4 large lettuce leaves
  • 8 slices fresh tomato
  • Mayonnaise

 

How to Do it:

In a large mixing bowl, mix all the ingredients together until fully incorporated. I use my hands.

Place in a baking dish and bake at 350° for about 45-50 minutes or until the internal temperature reaches 185.

Remove from the oven and allow to cool for about 5 minutes.

Turn the baking dish upside down to release the meat. Slice about ½ inch thick.

To make the sandwich, spread the bread with mayonnaise. Top with meatloaf, tomato and lettuce. That’s it! Delicious and low fat!

Makes about 4 sandwiches
