Ginger Sesame Cucumbers – Chinese New Year begins Today!

It’s the year of the Rat! Welcome the first day of the Chinese New Year with some cool cucumbers.

Each day there are activities to celebrate the dawn of a new year. Today fireworks are set off to welcome the new year and all chores are set aside for the day! If you sweep or clean today you will sweep away all the good fortune of the year. I’m up for that! There are a variety of other daily activities that lead up to the finale – the festival of the lanterns.

What kinds of food do you eat for Chinese new year? Here’s a good choice – Longevity Noodles [8] – eaten to ensure a long life. Eating Wontons [9] will bring wealth and and treasure.  Shaped like gold bars, Spring Rolls (aka eggrolls [10]) are eaten for prosperity. And a great side dish to all of these a cool, ginger sesame cucumbers.

Making the cucumbers

Start by slicing the cucumbers super thin using a mandolin.

Next, slice the onions using the same tool.

Put the cucumbers and all the other ingredients together in a non-corrosive dish (no metal) –

and mix well.

Next, chill for at least 12 hours.

This salad is refreshing and delicious – and so easy to make!

Ingredients
  • 2 cucumbers
  • 1/2 cup thinly sliced onion (white)
  • 4 teaspoons grated fresh ginger
  • 1/4 cup Seasoned Rice Vinegar
  • 1/4 cup ponzu sauce
  • 1/4 teaspoon crushed garlic
  • 2 teaspoons toasted sesame oil
  • 2 teaspoons black sesame seeds
Instructions
  1. Start by slicing the cucumbers super thin using a mandolin.

  2. Next, slice the onions using the same tool.

  3. Put all the ingredients together in a non-corrosive dish (no metal) and chill for at least 12 hours.

  4. This salad is refreshing and delicious - and so easy to make!
