Chinese Sausage Egg Rolls and Fried Rice

Egg Rolls with Fried Rice –

I was perusing the local Asian market and ran across these sausage. They are spicy and sweet and taste rich and flavorful. As I sat and enjoyed this delicious treat, the idea came to me. How would they be in fried rice? Or egg rolls? And so I tried it!

Here’s How to Do it:

Chop the vegetables and the sausages and set aside to prepare.

Heat 2 Tablespoons of the sesame oil in a heavy skillet (cast iron is the best).

Add the sausage and green onions, leaving out a few tablespoons of onion for garnish.

When the sausage starts to crisp, add the watermelon radish and seasoned radish to the pan. Cook just long enough to warm.

You can usually find watermelon radish at Whole Foods. They are about the size of a beet. They are white or slightly greenish pink on the outside and a beautiful pink on the inside.

Lay a few tablespoons of the mixture into the middle of the egg roll wrappers.

Fold over the sides,

then gently roll. Rub the edges with warm water to seal the roll.

Heat the canola oil until its hot enough that a piece of onion dropped into it sizzles. Carefully lay the rolls in the pan and cook about 2 to 3 minutes on each side, or until the egg rolls are golden. Drain on paper towels.

 

Mix the Chinese mustard with the ponzu and top with some green onions. Serve in a dipping bowl.

And now the rice. Heat sesame oil in the skillet and add the one chopped sausage and onions. When the sausage starts to get crispy, add the cooked rice and sesame seeds, then stir in the ponzu sauce.

After the rice is hot and starting to brown, push it to the side and add the remaining sausage to the pan. Cook until the sausage are slightly charred.

Serve hot, garnishing the rice with the remaining green onions.

Ingredients
  • 2 whole Spicy Chinese Sausage cut into 1/4 inch pieces
  • 3 green onions sliced
  • 1 large watermelon radish julienned
  • 1/3 cup seasoned radish
  • 2 Tablespoons toasted sesame oil
  • Oil to fry
  • 8 egg roll wrappers (spring roll wrappers will also work)
Dip
  • 1/2 cup ponzu sauce
  • 1 teaspoon Chinese hot mustard

Recipe Notes

You can make your own seasoned radishes. Shred a daikon radish and marinate it over night in rice wine vinegar and a splash of sesame oil.

Ingredients
  • 5 Chinese Spicy Pork Sausages
  • 3 cups cooked short grain white rice
  • 4 green onions, sliced
  • 1 Tablespoon Toasted Sesame oil
  • 1 teaspoon black sesame seeds
Instructions
  1. Heat the sesame oil in the skillet and add the one chopped sausage and onions. When the sausage starts to get crispy, add the cooked rice and sesame seeds, then stir in the ponzu sauce.

  2. After the rice is hot and starting to brown, push it to the side and add the remaining sausage to the pan. Cook until the sausage are slightly charred.

  3. Serve hot, garnishing the rice with the remaining green onions.
