Andouille Frittata

I love frittatas and I love andouille sausage!  Here is a great recipe that combines the two – a perfect Sunday morning breakfast!  This recipe uses chicken sausages – a little less fat but still great flavor!

How to Do it:

Preheat the oven to 350 degrees.

Heat the olive oil in a small, oven proof cast iron skillet on medium.

Beat together the eggs, sour cream, chives and water until frothy.

Slice the sausage and add to the pan.  Cook until it starts to brown slightly.  Add the bell pepper and cook until slightly softened.  Remove from heat.

Pour the egg mixture over the top of the sausage and bell pepper.

Spread the cheese evenly over the top.

Bake in the oven for about 20 minutes, or until the cheese is lightly browned and the eggs are fully set.

Makes 4 servings.
